If my iPhone gets stolen, can I still lock it remotely somehow to keep my info safe?

Apple actually has a free, built-in tool for this called “Find My”. Just log into iCloud.com on a computer or another device, open “Find My”, and you can put your phone into “Lost Mode”. That’ll lock it down tight so nobody can get into your stuff.
