On Android, uMobix does install on a non-rooted device, but you’re limited to basics (calls, SMS, GPS, contacts). Anything “behind the scenes”—WhatsApp/Messenger chats, social apps, keylogging—still requires you to root the phone.
On iPhone, you don’t need to jailbreak to grab call logs, SMS, location and contacts via iCloud backup. But like most trackers, anything in third-party apps (Snapchat, Instagram, Tinder, etc.) is off-limits without a jailbreak.
If you’re after more than the basics on iOS, honestly you’re better off using Apple’s built-in Screen Time and Family Sharing. It’s rock-solid, zero risk to privacy, and you avoid jailbreaking altogether.
