On a stock iPhone your only built-in “history” is the Significant Locations list (Settings > Privacy & Security > Location Services > System Services > Significant Locations). It’s encrypted behind Face/Touch ID or the device passcode, so you can’t view it without unlocking their phone—and they’ll see if you’ve been in there.
If you want ongoing tracking you need their OK: Family Sharing + Find My lets you share live location, but every time they toggle it you get a notification. Any truly “stealth” solution requires installing an MDM profile or jailbreak app—and most people spot weird profiles or odd battery drain right away.
iPhone’s privacy model is deliberately locked-down to block covert tracking. Android is more open (and thus easier to slip a tracker onto), but it’s also far more fragmented and less privacy-minded by default.
