Short answer: mostly gone forever, unfortunately. Instagram doesn’t store that stuff locally on the phone once it’s deleted - it goes to their servers and then poof. The monitoring apps can only capture what happens while they’re running, so if your kid deleted stuff before you had the app installed, you’re probably out of luck.
Some apps will keep screenshots or logs of what they captured in real-time, but they can’t magically resurrect things that are already gone. Think of it like a security camera - only records what happens after you turn it on.
